Close every tank valve, disconnect the tanks, and cap the lines. Tanks either come off the trailer for the move or ride secured in their brackets, valves closed, with nothing connected. This is the first thing a carrier checks, and a live propane system is a refused pickup until it is made safe.

If the system is due for recertification, transport day is a good excuse: a purged, certified system travels legally and reopens without questions at the destination health inspection.

Every drop. Hot side equipment gets emptied, and fryer oil especially: a half drained fryer redecorates the inside of a moving kitchen in one hard stop, and the cleanup costs more than the oil. Drain it, wipe the vats, and cap or bag the drains.

Drain the fresh water, gray water, and water heater tanks too. Water is weight the quote did not include, and in cold months it is a freeze burst waiting to happen in lines that cost real money to replace.

Empty the reach ins and freezers entirely, no food travels with the trailer, prop the doors ajar with a towel so they ride open a crack and do not grow anything on the way, and tape or latch them in that position. A refrigerator that arrives clean and dry passes its next inspection without a story.

Pack small wares, pans, utensils, and dry goods into boxes and take them with you, or strap them into secured containers if they must ride along. Loose steel in a moving kitchen scratches everything it touches, including itself.

Confirm every major piece, the range, the flat top, the hood, the reach in, the generator, is genuinely bolted to the structure, because transport finds every loose bolt. Anything on casters gets strapped or comes out. Latch every cabinet and drawer, and add painter’s tape where latches are tired.

Close and latch the serving windows and awnings, lock the door, and hand the key to the driver or tell your coordinator where it is secured. The delivery end needs to open the trailer for the condition report.

Running lights and brake lights working through the connector, tires holding air with legal tread including the spare, bearings serviced within recent memory, and brakes functional where fitted. Food trailers sit between seasons and fail quietly: if it has been parked for months, have the tires and bearings looked at before booking.

Confirm the hitch type and ball size at booking, stamped on top of the coupler, and confirm the tongue jack works. If the trailer cannot roll safely, say so, and a deck move gets quoted instead. There is no penalty for honesty, only for surprises.

Walk the trailer with your phone in daylight: every exterior panel, the roofline with its hood stack and AC, the coupler, the tires, and then the interior, equipment by equipment. The Bill of Lading condition report is the formal record at both ends, and your photos back it up.

For a builder delivery, ask the shop for their final photos and the build sheet. The trailer’s first transport should be its best documented trip.

The rig needs room to reach the trailer, hitch, and pull out: tight commissary lots, event grounds, and backyards all benefit from a minute of thought about the approach. At the destination, know where the trailer will sit and who meets the driver.

If the trailer is opening for business on arrival, plan the utility hookups and the health inspection around the delivery window, not the other way around. Your coordinator gives you a real window, and the calendar works better when the kitchen is the last thing plugged in rather than the first thing waited on.
